Aged Soy is simply aged soy in a pearl. As soy ages, the flavors meld more and become bolder. You get a lot of the roasted mushroom flavor found in soy. Aging the soy also concentrates the sugars which leads to a little bit sweeter product. It pairs well with sushi or any fish. It’s also very good on watermelon. The saltiness brings out the flavors of the watermelon and compliments the bright sweetness nicely.
